today after the patties from the heart I had advanced the dark whites .... what to do?? Groped, knowing that failure, meringue or try to do something else?
My indomitable spirit led me to yet another attempt to make the meringues ..... and incredibly (as inexplicably) have managed !!!!!!!!!!
To the amazement of my boyfriend and my sister, I must admit I am more than edible, albeit with a slightly chewy center.
Here is the recipe:
-Albums
-60 grams of sugar per egg-
a pinch of salt Beat the egg whites with salt until a stiff, then add a tablespoon of sugar at a time. When you have a smooth and shiny meringue (and that withstands the test of upside) put it in a pastry bag and the parchment paper to create the shapes you like.
Bake in preheated oven for 1 ½ hours at 100 °. Convection Oven I recommend.
